What does a vegan restaurant say when a guest asks if the wine or beer is vegan?
Quick answer
Name the glass or bottle, then say vegan, not vegan, or unknown from the producer note the restaurant keeps. If the note is missing, pause. Do not guess a fining agent, and do not invent a drinks-list percentage. The dish script is a different job: guest vegan question.
Vs other Intelligence guides
| Guide | Job |
|---|---|
| Guest dish script | Whether the plate is fully vegan. This page is the glass. |
| Kitchen policy | The URL for kitchen scope, honey, and cross-contact. The drinks note lives with the producer sheet. |
| Menu claims | Words on the food card. The drinks list uses the same honesty, on its own sheet. |
| Seasonal menu claims | Festive food wording. Not a house-wine guess. |
| Supplier spec | Invoice and receiving for food. The drinks note is the producer or importer line for that SKU. |
| Delivery apps | Commission and first-party orders. Not what staff say about fining. |
| This guide | What staff say when a guest asks if the wine or beer is vegan |
Composite operator guidance. Not legal advice on labeling or allergens. Do not treat a worksheet count as a typical attach rate for drinks.
Three lines. Only the noted one ships.
| Line | When it is true | This service |
|---|---|---|
| Vegan as noted | The producer or importer note for this SKU says no animal fining, or names a fining the note itself calls vegan | "This glass is vegan on our producer note. I can show you the line." |
| Not vegan | The note names isinglass, gelatin, casein, egg white, or another animal ingredient | "This one uses [agent] in fining. It is not vegan. Here is a glass whose note says otherwise." |
| Unknown | No note for this vintage, keg, or batch | "I do not have the producer note for this one. I will not guess." |
Staff line: "The producer note is the answer." A vegan kitchen does not upgrade an unknown glass into a yes.
Proof ladder (drinks)
| What is true this service | Staff may say | Staff freeze |
|---|---|---|
| A dated producer or importer note matches the SKU on the list | Vegan or not vegan, in the note's words | "All our wine is vegan" when one SKU is unknown |
| The note names isinglass, gelatin, casein, or egg | The agent, and a swap whose note is clear | A shrug, or "it is only a trace" |
| Beer, cider, or a mixer is on the same list | The same three lines | A separate folklore answer for beer |
| The guest asks about a honey mead or a milk stout | Name honey or lactose when the label or note names it | "Plant-based kitchen, so the drinks are fine" |
Script kit
- One drinks sheet. Each wine, beer, cider, and house pour gets vegan, not vegan, or unknown.
- Attach the note. Producer email, tech sheet, or importer line, dated, filed with the SKU. A memory of a website is not the note.
- Print three spoken lines on the staff card. Unknown is a complete answer.
- Name one swap that is vegan as noted and in stock tonight. No discount for asking.
- Rehearse once with a person who does not buy the wine. They read one unknown SKU back as unknown.
- Keep the dish script on its own card. Do not answer the plate and the glass with one slogan.
| Leave out | Why |
|---|---|
| "Organic means vegan" | Organic does not decide the fining agent. |
| "Natural wine is vegan" | Some unfined wines are vegan. The note still has to say so for this bottle. |
| A percent-off for the question | The question is about the glass, not a code. |
| A green slogan on the list | Claims calculator. |
Allow vs banned
| Surface | Allow | Kill |
|---|---|---|
| Table | SKU name, note status, one swap | Guessed fining, "everything behind the bar" |
| Printed drinks list | The same three statuses as the spoken line | A vegan leaf on unknown SKUs |
| By-the-glass change | Update the sheet before the new keg or bottle is poured | Last month's note on this month's batch |
| Board story | Unknowns cleared or left unknown | Invented share of vegan glasses sold |
EmpCo from 27 September 2026 still applies to a green line that also ships on an EU-facing menu or site. Do not publish a cover lift for clearer drinks answers.
10-check service log (run before the next seating)
Open the drinks sheet and one producer note. Log Y/N.
| # | Check | Pass |
|---|---|---|
| 1 | Staff name the glass or bottle? | Yes. |
| 2 | Status comes from a note, not memory? | Yes. |
| 3 | Unknown stays unknown? | Yes. |
| 4 | Isinglass, gelatin, casein, or egg named when the note names them? | Yes. |
| 5 | Beer and cider use the same sheet? | Yes. |
| 6 | New keg or vintage updated before pour? | Yes. |
| 7 | No organic-equals-vegan line? | Yes. |
| 8 | No discount for the question? | Yes. |
| 9 | Dish script still separate? | Dish script. |
| 10 | Did a vendor promise more wine sales from a vegan badge? | Ignore. No invented %. |
Fix the sheet that day. An unknown glass was called vegan: correct the line before the next seating.
Drinks freeze (labeled example)
Replace every cell from the live sheet. Do not copy the example as a sales benchmark.
| Field | Worked example | Your cell |
|---|---|---|
| SKUs on the list | 8 drinks example | [skus] |
| Notes on file | 6 dated notes example | [notes] |
| Unknowns still poured | 2 leftover unknown SKUs example. Say unknown, or pull them. | [unknown] |
| Lines that overclaimed | 1 leftover "all our wine is vegan" line example. Remove it. | [overclaim] |
Those cells are worksheet labels. If [notes] is NONE for a SKU, staff say unknown.
Go / no-go
| Call | When |
|---|---|
| No-go | No notes, a vegan mark on unknown SKUs, one slogan for the whole bar |
| Go on the script | Each poured SKU is vegan, not vegan, or unknown from a note |
| Partial go | Say unknown tonight where the note is missing. Add the note before the next service claims vegan. |
Score unknown SKUs called vegan, and notes older than the current batch. A drinks attach rate is not a KPI for the script.
Show the note.
Guests can use a named fining or a clear unknown. They cannot use a guess.
Template fields and 7-day run
| Field | Fill with | Do not invent |
|---|---|---|
[sku] | Glass or bottle asked about | A vegan claim with no note |
[note] | Dated producer or importer line | A staff memory of a blog |
[signer] | Person who hears one table | A card nobody rehearsed |
[markets] | US / EU / UK / both | One climate line on the drinks list |
Brief: "SKU: [sku]. Note: [note]. Signer: [signer]. Markets: [markets]. If the note is NONE, say unknown. No organic shortcut. No drinks %."
- Day 1: List every wine, beer, cider, and house pour. Count [skus].
- Day 2: File the producer or importer note per SKU. Count [notes] and [unknown].
- Day 3: Write the three spoken lines. Strip slogans.
- Day 4: Mark the printed list with the same three statuses.
- Day 5: Rehearse one unknown SKU. Confirm the person says unknown.
- Day 6: Listen during service. Log [overclaim].
- Day 7: Run the 10-check log before the next busy service.
Frequently asked questions
What does a vegan restaurant say when a guest asks if the wine or beer is vegan?
Name the glass or bottle, then say vegan, not vegan, or unknown from the producer note the restaurant keeps. If the note is missing, pause. Do not guess a fining agent.
Is organic wine vegan?
Not by that word. Staff use the producer note for the bottle in front of the guest. Organic does not name the fining agent.
May staff check a public wine list on their phone?
A public list can help them request a note. It is not the note. If the restaurant has no dated line for this SKU, the answer is unknown.
Does a fully vegan kitchen make the bar vegan?
No. The plate and the glass are separate answers. Unknown wine stays unknown.
What do we measure if not a drinks percentage?
Unknown SKUs that were called vegan, and notes that do not match the current batch.
