Green peppercorn and star anise may show blank nutrients when no plain dried-spice row exists on USDA or another cited national table. Sumac stays on the list with blank nutrients for the same reason. Grains of paradise, epazote, dried lemongrass, pandan, and hoja santa stay off: no honest single-ingredient dried row was found (only fresh herbs, brewed tea, or blend rows). Is honey listed?

No. This page is vegan-aligned. Honey and animal-derived seasonings are out of scope.

Why is water blank for some spices?

Water uses Mekonnen and Hoekstra (2011) Table 3 only. A blank cell means this list item does not use a matched Table 3 crop or derived spice row.

Why are some nutrient cells blank?

When USDA and other cited national food composition tables have no honest row for a dried spice on this starter list, the chart leaves nutrients blank instead of guessing or borrowing a nearby food.
